It is that joyous time of the year again where everyone is in the mood of giving, gleaming ornaments are hung around town and on christmas trees, malls are playing cheerful carols, and restaurants are cooking up feasts fit for a king. Caffé B is one such restaurant that has whipped up two delightful Christmas menus guaranteed to satisfy even the pickiest of eaters, and though it is located in the ritzy Marina Bay Sands Shoppes, its prices are still significantly lower than any fine dining restaurants out there, with dishes that can even rival a celebrity chef's restaurant.
Available exclusively from 13th to 25th December 2015 for lunch and dinner, the rich and comforting flavours of holiday feasting take the spotlight in the three-course Christmas menu by Caffé B bar and the six-course degustation Christmas Menu, invoking feelings of whimsical Christmas joy and the illusion of a royal feast.
Three-Course Christmas Menu by Caffé B Bar
If you think that three courses are not able to satisfy your holiday-induced appetite, you will happily find yourself proven wrong with this menu. Unlike other fine dining restaurants where they serve pathetic and meager portions, Caffé B dishes out large, generous quantities of food, and each dish from this three-course menu is brimming with gastronomical goodness. At $70 per pax, the three-course Christmas menu comes along with a glass of Prosecco – a fine sparkling Italian white wine that has pleasant fruit and flower aromas, and exhibits notes of tropical fruits, banana cream, hazelnut, vanilla and honeycomb.
Antipasto – Escargot a la Romana
A half dozen of fresh escargots sautéed with red wine and Italian herbed butter served with garlic focaccia
When the menu states that half a dozen escargots will be served, it really means a dozen escargots. The dish is served on a long plate with six square crevices, each of these slots contain two escargots that has been sautéed with red wine and topped with Italian herbed butter. I don't even know how to begin expressing my profound love for this antipasto. The escargots were so tender and succulent from soaking in the red wine, but it still remained springy and firm to the touch. This dish is made even more spectacular when combined with the sweet herby Italian butter with a pleasing umami flavor and smooth, melt-in-the-mouth texture.

1. Pesce – Italian Fritto Misto
A seafood platter with a variety of tempura prawns, fish and calamari complemented with pesto cream sauce
Caffé B gets their seafood delivered fresh daily to ensure that you are only getting the best and freshest ingredients in this massive platter. A large bowl is stuffed with three fillets of seabass (type of fish based on catch of the day), four calarmari rings, three prawns, two jalapeños, and crowned by a fresh savoy cabbage leaf. The seafood is dipped in a tempura batter, rolled in crispy breadcrumbs and deep-fried to a gorgeous golden-brown so that the batter is crunchy, crumbly and complements the mild-tasting seabass, the juicy prawns, and the bouncy squid rings. The grilled jalapeños are very spicy but very sweet, scrape off the seeds in the chili pepper and it will bring the heat down a notch. Don't forget to dip every bite of your food into the tangy pesto cream sauce which has a subtle sweetness and a refreshing aftertaste.
2. Carni – Roasted Ribeye
Premium ribeye marinated with herbs, cajun and dijon mustard served with broccoli and jacket potato
Prior to the ribeye being roasted, it is marinated overnight in a blend of herbs, cajun and dijon mustard. Don't be surprised when the ribeye arrives and it looks well-done when you slice into it. Since this is not a traditional pan-fried steak, there is no done-ness to the beef. This huge slab of beef is perfect for all the meat-lovers out there. While the ribeye may look well-done, each bite oozes with delicious and succulent beef au jus and you keep finding yourself sinking your teeth into extensive amounts of intramuscular fat. You can differentiate a good slice of beef from a subpar one by how marbled it is, and how it can simply be cooked in its own juices and still taste delicious without any additional sauces.
Dolci – Black Forest Surprise

I was filled with childish glee as this wonderful dessert was placed in front of me. I wasted no time in digging into the huge jar and shovelling layers of velvety chocolate ice cream, rich chocolatey cake infused with black sweetened cherries, fluffy mascarpone espuma (it has the consistency of thick whipped cream with a richer and creamier taste), and crunchy sweet rainbow sprinkles. This dessert also comes topped with wedges of fudgy almond chocolate cookies and a plastic dropper filled with cherry sauce which you should squirt into your cake. It was a sweet and delightful way of finishing off this Christmas menu, and leaves you feeling like a kid on Christmas day again.
Six-Course Degustation Christmas Menu
The six-course degustation Christmas Menu is a full on Christmas feast suitable for diners with bigger appetites or for those who want to go all out in treating themselves this festive season. Christmas only comes once a year, so we encourage everyone to give themselves pats on their backs for getting through this year and pamper themselves with a wonderful spread of festive dishes. At the unbelieveable price of only $100 per pax, you can add on $50 for wine pairing where four unique glasses of wine will be served in total to complement four specific dishes.
Antipasto – Sicilian Salmon Carpaccio
Thinly cut slices of fresh salmon complemented with a side of bell pepper brunoise, sake mayo and ricotta-stuffed San Marzano tomato
This beautifully plated starter that resembles a mini coral reef is both aesthetically and gastronomically pleasing. The thinly-sliced salmon is fresh and tastes like the sea while the diced bell peppers add crunchiness, sweetness and a freshness to the fish. The tomato is delightful and just slightly tart, and combined with the light and fluffy ricotta cheese, provides different textures and depth to the entire dish.
Pasta – Homemade Porcini Ravioli

One giant parcel of ravioli is served in a thick pool of sweet pumpkin cream sauce. Slather the chunky tomato cuire all over the pasta and slurp it down. The tanginess of the tomato mixed with the sweet pumpkin cream creates an umami flavor explosion. The skin of the ravioli is extremely thin and it is packed with juicy, springy porcini mushrooms, combined with the shaved parmesan cheese, it emits an earthy and musky taste very akin to truffle-infused dishes.
Intermezzo – Pineapple & Lime Bacardi Sorbet
They really do not scrimp on the alcohol in this sorbet. Served in a tiny glass jar, consuming this is like taking a shot of pineapple and lime flavored Bacardi in slushie form. The slight bitterness of the Bacardi, the sourness of the lime and the sweetness of the pineapple supposedly helps in cleaning your palate. It is extremely refreshing and awakens your tastebuds for the main courses.
Pesce – Cod in Prosciutto and Saffron

Air-flown directly from Chile, a massive chunk of white cod is lightly marinated, wrapped in Italian prosciutto ham and pan-seared to a medium doneness resulting in tenderized melt-in-the-mouth flakes of cod that is soft yet supple. The prosciutto ham wrapped around it provides the perfect level of saltiness to go along with the mild flavor of the fish, and it provides a nice chewiness that contrasts in texture with the delicate cod. The fragrant saffron cream sauce gives the fish a perfumey aroma and sets a flowery and very pleasant background taste to the dish.
Carni – Festive Roasted Turkey Breast

No Christmas feast is complete without turkey, and this particular turkey dish is practically Christmas on a plate. People tend to avoid turkey because it comes out really dry and hard most of the time, but the way that this is prepared is the epitome of prefection. It is a dish erupting with Christmas cheer and bursting with depth and complex flavor dimensions. Every ingredient and element in the dish complemented each other wonderfully. The turkey is tender and succulent, the spinach gives a fresh creaminess, the cranberry sauce is sweet and fruity, the boiled chestnuts are subtly nutty, and the button mushrooms are silky and earthy. The overall result is a kaleidoscope of flavors and textures that will tantalize your palate.
Dolci – Rainbow Log Cake

End the year on a colorful note with this elegantly constructed dessert. The pretty rainbow log cake itself is sweet, spongy and citrusy. The chocolate mirror is basically a fudgey chocolate cookie baked with sliced almonds, and the pannetone (a type of sweet bread) is crunchy on the outside but soft and moist on the inside. This dessert leaves a warmth in your mouth and will cast flickering images in your mind of enjoying sweet treats by the glow of a fireplace.
