Caffé B realizes that in order to honor the most special man in your life, a very exclusive menu should be concocted befitting nothing less than a King. A thoughtfully assembled 5-course meat-centric feast will be cooked up for your old man with various surf 'n' turf elements guaranteed to delight the carnivore in him. The Father's Day Menu is available from 12th to 19th June 2016 for both lunch and dinner at $70++ per pax with a wine pairing option for an additional price of $40++. It is highly recommended to make reservations in advance as the posh Japanese-Italian restaurant in The Shoppes at Marina Bay Sands could be fully booked in celebration of Father's Day.
Focaccia Bread with Olive Tapenade
Prior to your courses being served, complimentary sliced focaccia bread will be brought to your table with a side of olive tapenade – a blended mix of black olive, anchovies and garlic. The savory, briny and garlicky tapenade on the herby focaccia helps to temporarily quell those raving hunger pangs while your family eagerly awaits the arrival of the scrumptious 5 courses which descriptions are enough to make your mouth water.
Antipasto – Sous Vide Beef Tartare
A combination of diced Black Angus Beef, Shallots, Gherkins and Capers tossed with Hollandaise Sauce, topped with minced Egg White and Green Frisee
Kick off your Father's day meal with a hearty starter that will put some hair on your chest. Caffé B's version of beef tartare is in a class of its own that starts off with a high quality slab of well-marbled Angus beef that goes through a sous vide process so that the beef slightly cooks through while retaining all its juices, eliminating the taste of iron in traditional beef tartare where the meat is entirely raw, but still remaining extremely tender and delicate. The sous vide beef steak is then chopped up into chunks, coated with hollandaise sauce, neatly shaped into a block and topped with minced shallots, gherkins, capers, green frisee and egg white. The creamy and citrusy hollandaise sauce amplifies the texture of the butter-soft beef chunks, and the confetti of sharp shallots, tangy capers, and briny gherkins provide a nice crunch. This divine beef tartare has a hint of spice from a pinch of cayenne incorporated into it which comes as a pleasant surprise to counteract the strong beefy flavor of the dish.
Pasta – Capellini Al Gamberetti

The piquant tomato sauce is very sweet and tart thanks to the white wine which helps to intensify the flavors, yet it remains very light and refreshing. The angel hair pasta is cooked perfectly al dente and is springy to the bite, with the prawns cooked to a supple bounciness, and the briny artichoke adding a silky texture, this zesty pasta might taste simple at first but you will soon discover the subtle underlying savory notes that will leave you smacking your lips and craving for more.
Pesce – Pistachio-crusted Maguro in Guacamole Puree

The tuna is perfectly seared and firm on the exterior while the inside remains raw to retain its richness and tenderness. It is then encrusted with crushed pistachios for a crunchy contrast to the soft and buttery tuna. The guacamole puree provides a fresh and green after-taste to the rich nature of the tuna, while the buffalo mozzarella gives it that much needed creaminess to complete a flavor explosive dish.
Carni – Rack of Lamb Glazed with Plum Wine

You might hear a choir of angels singing upon sinking your teeth into this tender and juicy rack of lamb. That is how heavenly and divine this red meat masterpiece is. The aromatic and intoxicating fragrance of the lamb wafted to our table as soon as it was brought out of the kitchen. Two extremely chunky and succulent lamb chops, outlined by a thick layer of sinful melt-in-your-mouth fat, are slow-cooked medium-rare and then drenched with a sweet, citrusy and savory sauce. The lamb chops burst with juices and are so tender that it practically disintegrates in your mouth. The quality of the lamb rack used is so rich and decadent that it has a taste akin to foie gras – buttery, creamy and full of umami.
Dolci – White Chocolate Caramel Brownie

Finish off Father's Day on a sweet note reminscent of your childhood times when your dad would sneak you sugary sweet treats without your mum's knowledge. Indulge in this decadent dessert which is practically a whole block of chocolate set on a dark chocolate walnut brownie. Caramel, white chocolate, mascarpone and cream cheese are incorporated together to form a solid chunk of caramel-y goodness that goes extremely well with the dense and spongey chocolate brownie. The vanilla sauce contributes a creamy milkiness to the dessert, while the sour fruits help to balance out the sweetness level.
