When we feature a restaurant more than once, it's because we passionately stand by its food and service. And no other restaurants have as many glowing reviews on FreshGrads.sg than Caffé B does. Caffé B has managed to take our breaths away umpteen times (1
times altogether to be exact), and this time round when the seasonal feasting begins, it continues to make culinary miracles happen.
A grandeur spread of festive gastronomical masterpieces await to delight you from 1st to 31st December 2016 at Caffé B, the ritzy Japanese-Italian fine-dining restaurant located in The Shoppes at Marina Bay Sands. Feast on delicious gourmet treats with the three-course Christmas menu at the bar for just $68++ for 2 pax (or $38++ if you're dining alone), or indulge in the lavish six-course Christmas menu at the restaurant for $148++ per pax. All prices are inclusive of wine pairing.

If you are dining with a partner, the total cost for two is a steal at just $68++ inclusive of fine Italian wines that accompany all three courses. Each course will arrive on a sharing platter portioned for two pax.
Smoked Salmon and Tomato Salsa
The taco is freshly made in-house everyday with yellow corn meal, and has an amazingly thin shell with a big crunchy impact. The marinated smoked salmon housed within the cripsy taco is packed with a subtly spicy tomato salsa and drizzled over with dill mayonnaise, creating a smoky, tangy, zesty, refreshing and creamy flavor combo with just a slight kick of spice for that extra oomph.
Roasted Young Tom Turkey Breast & Roasted Striploin of Beef
A giant slab of wagyu beef and a rolled up portion of young tom turkey breast go through a sous vide process to lock in all its moisture and natural juices within the meat before they are slow roasted over low heat so that they cook in their own glorious fat. The steak is served with an aromatic and savory veal jus which adds a touch of sweetness to the extremely tender and succulent marbled cut of beef. The turkey breast is incredibly moist, juicy and fatty, just look at the close up shot of the intricate fat dispersion in that rolled up hunk of pink turkey meat. The sweet nature of the turkey pairs extremely well with the fruity cranberry sauce. This dish is served with a side of brussel sprouts, caramelized pineapple rings, parmesan grilled tomato, chateau potatoes, buttered chestnuts and baby corn.
Vanilla Gelato Casatta
This is a gourmet ice cream cake of unprecedented quality. Hazelnut sponge cake is generously layered with a heaping of premium vanilla gelato with infused brandy and this dessert surpasses all other ice cream cakes we have ever had. It was decadent and refreshing, sinful yet heavenly, with the rich flavors of hazelnut and vanilla coming together to form a perfect union of dessert artistry.

Duck Liver Terrine Crocrante
Cubes of buttery soft foie gras terrine are brushed with honey mustard and coated with a crust of crushed almonds and pistachios nuts. The foie gras has a melting point of the average human body temperature and it melts into a rich, creamy, and umami goodness immediately as it touches the tongue. The honey mustard gives it a sweet and sharp flavor, while the exterior of crushed nuts provides a nice contrasting crunch to the snowy texture of the foie gras. A fresh and fruity assortment of charbroiled yellow watermelon, choya jelly, pea tendril and green apple chutney sweetens and lightens up the deep richness of the foie gras terrine.

The winter season warrants a steaming hot bowl of hearty soup prepared fresh by the chef every day. We had the cream of pumpkin and butternut squash which was a lovely, velvety, creamy and sweet affair that filled us with the warmth of a fireplace.
Sakura Denbu Risotto
The sakura denbu risotto is cooked in champagne and prepared with shallots, parmesan cheese and olive oil. It is then wrapped in a crisp layer of seaweed and garnished with sautéed onions, a pinch of sakura mirin and bonito flakes. The risotto is cooked perfectly al dente with a nice bite to it. It is a light and fragrant dish with crunchy bits and a slightly creamy texture that will perk up your palette.
Poached Lemon Sole & Truffle Cream
The name of this fish is misleading as the lemon sole is neither a sole, nor does it remotely taste like lemon. It is a flat fish with a plump body best cooked simply for its enjoyable naturally delicious flavors and textures. Caffé B cooks its lemon sole fillet in a light and foamy cream sauce with authentic black truffle slices that give a slight earthy richness to the delicate, sweet and meaty flesh of the lemon sole. It is served with a pile of crispy deep-fried strips of green zucchini and carrots, yellow chanterelle, edamame, champagne mini pear and mazano pearl tomato.
Duo of Lamb Loin
This pair of sinful lamb parcels are worth every calorie. Each of these lamb loins are as big and as thick as a tomato, or a lady's fist. Both of them are sous vide for an hour before each head down their very own cooking path. One is marinated in herbs and mustard and then roasted on a skewer, while the other is pan-seared and lightly seasoned with fried sesame seeds. They are both perfectly cooked medium rare, and extremely delicious in their own right. Each is heavily outlined with a thick border of luscious and gelatinous fat with the initial consistency of jelly which liquifies and melts in your mouth like butter over time. The lamb meat itself is firm yet tender, and so succulent, it bursts with juices. A layered tomato with a blend of ricotta cheese, parmesan cheese, basil and thyme accompanies the lamb duo for a refreshing and creamy zing.
White Forest Verrine Style
Doesn't this gorgeous dessert just trigger illusions of a magical patch of grass in a forrested area just before the first snow fall in winter? This white forest verrine style's kaleidoscopic combination of Christmas colors really puts one in a joyful festive mood. Each mouthfeel tastes just like Christmas morning, with layers of white chocolate mousses, sour cherry compote, mascarpone con matcha chantilly, matcha soil and raspberries bringing all kinds of flavors to the table. It is the perfect mix of sweet, sour and bitter with a light and creamy fluffy mousse.
